Nutritional Information For Foods

Since the beginning of my watch fat intake, I see four things that I'm not totally clear. Saturated fat (bad), trans fats (real bad), poly / monounsaturated (good) and cholesterol. I am puzzled when I see cholesterol listed on the Nutrition Information of food. Is it good, bad, or as-long-as-you-are-not-too-kind much? When should I be concerned with the amount? (40, male, 185lbs., Non-smoker/drinker)
Under the label is better. Your body will make all you really need if there are none in your diet. I have read in many places, only in animal products. Reduce the fat but incease antioxidants from fruit. If you still can enjoy a fatty meal (I can not) have fruit with it. Antioxidants in foods consumed at the same time will avoid certain fats digested doing bad things your arteries. I had a sore throat for a day and one week, another time after a meal without fruit, but a little fat in it.
